In New York City, breakfast isn’t just the first meal of the day—it’s a way of life. The smell of fresh bagels drifting from neighborhood bakeries is as much a part of the city as yellow taxis and crowded sidewalks. This Everything Bagel Deluxe takes that iconic breakfast staple and cranks it up several notches. Toasted everything bagels are layered with creamy cream cheese, hearty chicken salad, crisp lettuce, juicy tomatoes, and sharp red onions.

This creates a sandwich that’s equal parts comfort food and deli masterpiece. It’s big, bold, and built to satisfy even the hungriest appetite.
A Jazz-Fueled Morning in Manhattan

I first discovered a sandwich like this after stumbling out of a tiny jazz club somewhere deep in Manhattan long after midnight had become sunrise. The saxophone was still ringing in my ears, and my feet were tired from wandering city blocks. The streets were beginning to fill with delivery trucks and commuters. Following the scent of fresh bagels, I ducked into a bustling deli where locals were already lining up for breakfast. Behind the counter sat a mountain of bagels, tubs of cream cheese, and enough sandwich fixings to feed a small army.
Creating My Own Deluxe Version
What caught my eye wasn’t the classic cream cheese bagel everyone seemed to be ordering. It was a towering sandwich piled high with chicken salad and fresh vegetables. One bite and I understood why New Yorkers are so fiercely loyal to their delis. The combination of chewy toasted bagel, creamy filling, and crunchy vegetables was absolute perfection. Years later, I found myself recreating that memorable breakfast back home. I added my own touches and built what became this Everything Bagel Deluxe.

It’s now one of my favorite grab-and-go breakfasts whenever I want a little taste of New York without buying a plane ticket.

Phil McCockin’s New York Chicken Bagel Deluxe
Ingredients
For the Sandwich
- 1 everything bagel sliced in half
- 2 tbsp cream cheese
- ½ cup chicken salad
- 2 –3 tomato slices
- 2 lettuce leaves
- 2 –3 thin red onion slices
- Optional: sliced cucumber avocado, pickle spear
Homemade Chicken Salad (Optional)
- 1 cup cooked chicken breast shredded
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 celery stalk finely diced
- 1 tsp lemon juice
- Salt and black pepper to taste
Instructions
- If making homemade chicken salad, combine all chicken salad ingredients in a bowl and mix until creamy. Chill until ready to use.
- Slice the bagel in half and toast until lightly golden and crisp.
- Spread cream cheese evenly across the bottom half of the warm bagel.
- Spoon chicken salad over the cream cheese and spread evenly.
- Layer tomato slices on top of the chicken salad.
- Add lettuce leaves and red onion slices.
- Add optional cucumber or avocado if desired.
- Place the top half of the bagel over the filling and gently press down.
- Wrap in parchment paper for an authentic deli-style experience.
- Serve with hot coffee and a pickle spear on the side.
Just The Tips
- Lightly toast the bagel to maintain its chewy New York-style texture.
- Chive or scallion cream cheese adds an extra layer of deli flavor.
- Soak red onion slices in cold water for 5 minutes to mellow their bite.
- Make the chicken salad a day ahead to allow the flavors to develop.
Storage
- For best results, store the chicken salad separately and assemble the sandwich just before serving. Prepared chicken salad will keep refrigerated for up to 3 days in an airtight container.
